The Chardonnay was whole cluster pressed and fermented on its lees using 40% new French oak barrels with the remainder in self stirring egg shaped concrete fermenters. In order to retain the Chardonnays natural acidity, malolactic fermentation was inhibited. The result is a wine with a dazzling aromatic landscapeembracing
